Integral to achieving this vibrant fruit profile is Billecart's policy of early fruit harvesting to optimize fruit freshness and acidity. The harvested grapes are then chilled in a cold room overnight to retain their acidity before crushing. Another factor is the firm's technique of double cold settling to remove the coarser lees without oxidation before they undergo a long, cold fermentation.
