WINERY NOTES - From this highly calcareous soil, la Croix Boissée acquires a firm body with marked and “chalky” tannins. It is complex, fat, with aromas of very ripe fruit, and needs a few years of aging in bottles (2 to 20 years). Quantity is limited.
Manual harvest. Fermentation of 20 days in oak vats, then 24-month aging in oak barrels 1-3 years old then, 9 months in ciment tank. Bottling in september, three years after harvest. No filtration.
The vineyard has always been maintained according to environmentally friendly methods (no chemical weed killers) guided by observation and common sense depending on the climatic conditions of the year.
The entire vineyard is now conducted in organic farming since 2006.
