It shows off the variety's rich, viscous fruit that's given an expansive feel from its moderate, juicy 'inner acidity'; it's further balanced by an undercurrent that's lightly grippy and saline, finishing with a gently bitter pithiness. This is a partner for flavorful seafood, citrus-marinated pork loin, medium-rare spring lamb with peas, and soft buffalo or sheep cheeses.
