The rums selected by Marc Darroze are raw, without any sweetening.
After several years of aging in Trinidad, these rums finish their aging in Gascony in small 220 liter barrels which have previously aged Sauternes wines but also in old 500 liter barrels of Fino, Oloroso and Manzanilla.
Tasting Notes,
Straw color, gold reflections. The nose is very fine. Mix aromas of sugar cane, dried fruits (dates, apricot), spices, honey, beeswax. There are also flavors of pastry cream, vanilla crème caramel and sweet pepper.
We find these spicy notes in the mouth: pepper, chilli, balsamic. Lots of roundness and fat. Long in the mouth.
